Chef Saloni Kukreja's recipe for chocolate cake rich in cream cheese frosting and spiced mulberry compote melts in your mouth. Here's how you can prepare it at home.
• 1¾ cups flour • 1¼ cups castor sugar • ¾ cup cocoa powder • ½ tbsp baking soda • 1 tsp baking powder • ¾ tsp salt • 1 cup + 2½ tbsp water • 1 tbsp instant coffee • ½ cup oil • ¼ cup yoghurt • ½ tbsp vanilla extract • 3 tbsp vinegar • ½ cup butter • 1 cup cream cheese • 1 cup sifted icing sugar • ½ tbsp vanilla extract • A pinch of salt

• Start by mixing dry ingredients such as flour, cocoa powder, salt, baking powder, and baking soda.
• Next, mix all wet ingredients such as oil, yoghurt, and vanilla extract and add castor sugar as well.

• Transfer the flour mixture to the oil and yoghurt bowl and mix gently. Dissolve instant coffee in warm water and pour it as well.

• Add vinegar and fold all ingredients carefully and do not overmix. Make sure to prepare a smooth and lump-free cake batter.
• Line the cake moulds with foil, grease with some oil, transfer the freshly prepared batter and bake in a preheated oven at 165°C for about 20 minutes.

• To make the cream cheese frosting, mix room-temperature butter and cream cheese with sifted icing sugar, salt, and vanilla extract.

• Once done, assemble cakes with frosting and mulberry compote and stack them neatly.
