A Healthy Comfort Food

• 500 g spinach   • 200 g pumpkin   • 2 medium carrots • 2 medium potatoes • 1 medium radish • 1 small cauliflower • 1 cup peas • 2-3 garlic cloves • 2 inch ginger • 1 medium onion • 2 green chillies • A handful of coriander leaves • 3 medium tomatoes • Salt • 2 tbsp ghee/ oil • Hing powder • 1 tsp red chilli powder • 1½ tbsp Everest sabji masala/ Pav bhaji masala

• Start by washing spinach, pumpkin, carrots, potatoes, radish, and cauliflower thoroughly and chopping them.

• Add all the washed veggies, peas, and garlic cloves one by one to a pressure cooker.

• Next, blend onion, green chilli, ginger and coriander leaves into a coarse paste and add the mixture to the cooker.

• Sprinkle salt according to your taste and cook till you get 3-4 whistles.

• Next, gently mix the veggies using a masher.

• In the next step, heat ghee/ oil in a pan and saute hing powder. Add tomato puree, red chilli powder, sabji masala/ pav bhaji masala, and salt and cook.

• Once the oil starts releasing, add mashed veggies to the tomato mixture. Cook for a few minutes on medium flame.
