1/2 cup of cooked rice 2-3 eggs chilli oil scallions (optional) salt cheese

First, heat a dash of chilli oil. Then, add 1/2 cup of cooked rice mix it well till its combined with the chilli oil.

Then, spread the rice evenly on the pan by gently pressing it down. Let this cook for a few minutes till the bottom starts to develop a crisp crust.

Then, pour 2-3 whisked eggs obver the rice crust.

Garnish with cheese and chopped scallions. Cover it and let the eggs cook in the steam.

Fold the omelette and serve it with your favourite hot sauce. Your Crispy Rice Omelette is ready!
