Poori Payasam is a popular dessert from Karnataka that combines the sweetness of payasam with crunchiness of pooris. To make it at home, try this simple recipe by food blogger Bhumija Bobby (@bhumizz_eats_n_treats).

For pooris ½ cup rava/maida 1 tsp ghee 1 tsp sugar Water/milk (to knead) For payasam 500 milk 2 tbsp fresh cream 1 tsp cardamom powder 3-4 tsp saffron milk 5-6 tsp sugar Nuts of choice

1. Take rava, sugar, and ghee in a bowl, and mix well in a bowl. 2. Add small quantities of water gradually and knead to form a dough. Let it rest for a few minutes. 3. Roll out small pooris and deep fry them until golden brown.

4. Take the milk in a pan and let it boil on a low flame till it is reduced to ¾ of the original quantity. Keep stirring.

5. Then, add fresh cream, cardamon powder, saffron milk, and sugar and continue to stir well.

6. Add ghee and crushed pooris to the payasam, and let it cook for about a couple of minutes.
