Khuzi is often prepared during large gatherings, weddings, and national celebrations like UAE National Day.
Khuzi is a traditional Emirati dish known for its fragrant blend of spices, including cumin, cinnamon, cardamom, and saffron. It typically consists of tender lamb or goat, served on a bed of spiced rice with roasted nuts and raisins, offering a rich and aromatic experience.
Rice, lamb shank, onions, garlic, tomatoes, ground cumin, ground coriander, cardamom pods, cinnamon stick, cloves, bay leaves, saffron strands, vegetable oil, salt, black pepper, water, roasted nuts (almonds and cashews), raisins.
Rub the lamb shank with salt, black pepper, ground cumin, and ground coriander. Let it marinate for at least 1 hour for deeper flavour.
Heat oil in a large pot. Sear the lamb shank until golden brown. Add chopped onions, garlic, cardamom pods, cloves, and a cinnamon stick. Cook until aromatic. Add water to cover the lamb, then simmer until tender (2–3 hours
In a separate pot, sauté chopped tomatoes, spices, and bay leaves. Add rinsed rice and stir. Pour in the lamb broth (strained from the simmered lamb) and cook until the rice absorbs the liquid and is fluffy.
Place the cooked rice on a large serving platter. Arrange the lamb shank on top. Garnish with roasted nuts, raisins, and saffron strands for an authentic touch.
